Some sample recipes:

 

1. Zucchini and Potato Soup
 



Preparation time: 15 min., cooking time: 20 min. with a pressure cooker
 
• 5 small zucchini squash (cut in thin round slices) • 1 small square (1 oz.) processed cheese (Kiri) or 4 oz. parmesan grated cheese
• 2 medium potatoes (peeled and cut into small cubes) • 1 tsp. salt
• 2 tbsp. olive oil • ½ tsp. pepper
• ½ cube chicken stock  

  • Pour olive oil into a pressure cooker
  • Add the vegetables and chicken stock and fry 3 to 4 minutes
  • Add cheese, salt, and pepper and cover with one inch of water
  • Cover the pot tightly and simmer for 15 minutes after the vapor begins its release from the valve. Remove from heat and cool enough to open cooker. Stir and serve

2. Spaghetti Bolognaise (spaghetti with meat sauce)
 



Preparation time: 15 min., cooking time: 55 min.

All vegetables should be chopped small: • 1 tsp. pepper
• 3 small zucchini squash • 1 tsp. thyme
• 1 red bell pepper • 1 tsp. oregano
• 1 medium onion • 1 tsp. basil
• 3 tomatoes • 2 tbsp. vegetable oil
• 2 chopped carrots
• 1 green bell pepper • 1 lb. ground beef
• 3 cloves garlic • 1 package (1 lb.) uncooked spaghetti noodles
• 2 tsp. salt • ½ cup tomato paste



- Place all vegetables and spices in a medium pot with 1 cup water
- Cover and simmer on a medium fire for 40 min., stirring occasionally
- In a frying pan, heat oil and add beef. Cook until browned and reserve
- In a separate pot, bring a large pot of water to a boil and add package of spaghetti
- Cook until pasta is tender, drain, and put aside
- When vegetables are soft, place them in a blender and blend until smooth
- Pour sauce back in the pot, add tomato paste and fried meat and boil another 10 min. Serve sauce on top of spaghetti noodles

3. Chinese Chicken
 



Preparation time: 30 min., cooking time: 30 min.

• 8 oz. or 1 box long Chinese noodles • 2 tsp. salt
• 2 tbsp. sunflower oil • 1 clove garlic (mashed)
• 2 chicken fillets (cut into thin strips) • ½ lemon (squeezed)
• 1 inch fresh ginger root (peeled and thickly grated) • Ό cup soy sauce


Here are examples of vegetables that can be used in this recipe. You can choose your favorites.
• 2 medium carrots (peeled and chopped into long, thin slices)
• 4 oz. flat green beans (cut off ends and chop)
• 4 oz. rounded green beans (cut off ends and chop)
• 1 fist-sized piece of cabbage (chopped into long strips)
• 1 large onion (chopped into long strips)
• 2 medium squash (sliced into matchstick- size pieces)
• 3 broccoli florets (cut into small chunks)
• 1 red bell pepper (chopped into long thin strips)
• 1 fist- sized piece of cauliflower (cut into small chunks)

- Bring a small pot of water to a boil, add noodles, and boil 4 minutes
- Drain noodles and rinse in cold water
- Heat oil in the pot, add chicken, and fry 4 to 5 minutes until golden, stirring continuously
- Remove from pot, and transfer to a dish
- Place all vegetables and ginger in the pot and fry for 4 to 5 minutes, continuously stirring
- Add chicken back into pot with noodles, salt, garlic, and lemon
- Mix well and let it cook on fire for another 10 minutes
- Add soy sauce and mix well

4. Salmon Tart
 



Preparation time: 15 min., cooking time: 25 min.

• 1 tbsp. vegetable oil • 4 eggs
• 1 tbsp. flour • 12 oz. grated mozzarella and Swiss cheeses
• 1 box frozen pastry dough • 1 tsp. white pepper
• 8 oz. smoked salmon slices • 1 tsp. nutmeg
• 1 lb. fresh whipping cream



- Spread oil along bottom of pie pan
- Sprinkle flour evenly in pie pan
- Roll out pastry dough and push down along all sides and bottom
- Make fingernail holes on bottom so dough doesn’t rise
- Place salmon piece by piece in 1 or 2 layers on the bottom
- In a bowl, mix the cream, eggs, ½ the cheese, white pepper, and nutmeg
- Pour mixture in pie crust
- Add remaining cheese on top
- Place in oven at 375°F and bake 25 minutes until golden brown

5. Tabboule
 



Preparation time: 20 min.

• ½ lb. fresh parsley (chopped small) • 1 pinch of pepper
• 15 fresh mint leaves (chopped small) or 2 tsp. dried mint • 1 large tomato (diced and drained of water in a colander)
• 6 long green onions (chopped small) • Ό cup dry wheat germ (soaked for 15 min. in a bowl of water)
• 1 medium onion (chopped small) • 2 small lemons (squeezed)
• 2 tsp. salt • 5 tbsp. olive oil



- In a large bowl, combine the parsley, mint, onions, tomato, salt, and pepper and toss
- Remove the wheat germ from the water
- Squeeze out the excess liquid
- Add to the salad mix
- Pour in the lemon juice and olive oil and toss until well-mixed

6. Rich Chocolate Cream
 



Preparation time: 5 min., cooking time: 20 min.

• 5 oz. dark chocolate • 1 cup milk
• 8 tbsp. cold water • 4 egg yolks



- Break the chocolate into chunks and melt with water in a pan
- Stir constantly over a low fire with a wooden spoon
- Add milk in slowly and cook for 10 to 15 minutes
- Add more milk if necessary (the chocolate must have a creamy consistency). Remove from fire
- Remove 5 tbsp. of chocolate cream and allow to cool in a medium bowl
- Separate egg yolks from the whites
- Whisk the yolks into the bowl of chocolate
- Add the egg mixture to the pot of chocolate and mix slowly to obtain a thick and creamy consistency
- Pour the chocolate cream into several bowls
- Refrigerate before serving
