Over 40 helpful hints and rules of thumb are included in the
cookbook, inlcuding:
- When cooking
vegetables that grow above ground, the rule of thumb is to
boil them without a cover.
- A lump of sugar added
to water when cooking greens helps vegetables retain their
fresh color.
- Never soak vegetables
after slicing; they will lose much of their nutritional
value.
- It's easier to thinly
slice meat if it's partially frozen.
- The freshness of eggs
can be tested by placing them in a large bowl of cold water;
if they float, do not use them.
- Over-ripe bananas can
be peeled and frozen in a plastic container until it's time
to bake bread or cake.
- Add raw rice to salt
shakers to keep the salt free-flowing.
